Equipment

  • Electric mixer
  • Measuring cups
  • Measuring spoons
  • 2 mixing bowls
  • 1 extra small bowl
  • Spatula
  • Cookie/ice cream scoop
  • Baking tray/s

Ingredients
  

  • 4 tbsp water
  • 2 tbsp flaxseed meal
  • 225 g salted butter room temperature
  • 1 cup caster sugar sifted
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cup plain flour sifted
  • 2-4 tbsp brewers yeast sifted
  • 1 tsp baking soda sifted
  • 1 tsp salt sifted
  • 3 cup rolled oats
  • 1 cup choc chips optional

Instructions
 

  • Preheat oven to 160 degrees (celcius) fan-forced. Line baking tray/s with baking paper.
  • Mix flaxseed meal and water in a small bowl, set aside to soak.
  • Cream the butter and sugars with an electric mixer for approximately 3 minutes.
  • Beat in eggs, one at a time, before mixing in the vanilla extract and soaked flaxseed.
  • Mix in the sifted dry ingredients on low speed – flour, brewers yeast, baking soda and salt. Stop mixing as soon as the dry ingredients have been incorporated.
  • Stir in the oats and choc chips until evenly distributed in the cookie dough.
  • Scoop dough onto prepared baking trays, making sure to leave enough space between scoops to accommodate any spreading.
  • Bake for 12-15 minutes (12 minutes for softer cookies, 15 minute for crunchier cookies). Remove from oven and rest for 2 minutes on the cookie trays before transferring to cooling racks to cool.

Notes

  • Flaxseed meal can be found at Woolworths or Coles
  • Brewers yeast can be found at natural health food shops or even at Woolworths as well
  • The optional 1 cup choc chips can be substituted with other mix-in ingredients of your choice. Some ideas:
    • 1/2 cup macadamia nuts + 1/2 cup white choc chips
    • 1/2 cup dried cranberries + 1/2 cup white choc chips
    • 1 cup raisins (or other dried fruits of your choice)

Cookie Christmas Tree – Instructional

To make a Cookie Christmas Tree you will need:
* 12 star-shaped fondant-covered cookies – 2 of each size XS, S, M, L, XL, XXL
* Approx 50g royal icing, in piping bag
* Assortment of sprinkles to decorate
* Plate/cake board on which to assemble the Cookie Christmas Tree

Massage the royal icing in the piping bag to ensure it is all an even consistency, before you snip the tip off the bag with scissors. To start, do not to cut too much off, or as you go to pipe, too much will come out at once. You can always go back and cut off a bit more if it is too small.

  1. Pipe a small mound of royal icing onto the plate where you want your Christmas tree to go (about the size of a 10c piece).
  2. Place on an XXL cookie onto the royal icing, centred, cookie side down, and press down firmly to secure (not too hard or the cookie could possibly break).
  3. Proceed to pipe another small amount of royal icing onto the centre of the star, and place the other XXL cookie on top, centred, but offset the star tips.
  1. In this fashion, continue to build up the tree, 2x XXL, 2x XL, 2x L, 2x M, 2x S and 1x XS. 1x XS star
  1. Decorate the single XS star that will go on top of the Christmas tree, using some royal icing for the glue and attaching your choice of sprinkles.
  1. Set the top star aside while you continue to decorate the remaining tree branches, using piped royal icing and sprinkles.
  1. Finish off the tree by generously piping royal icing onto the very top and placing the XS star standing up.
  1. Set aside for an hour or so, to allow the royal icing to dry (depending on climate and humidity).

Christmas Mini High Tea

We all know what Christmas lunch is like, feeling as stuffed as the turkey and feeling rather regretful as we try make it through the afternoon without falling asleep lol I usually offer up Christmas desserts, this year I decided to do a mini high tea.
