Cookie Christmas Tree – Instructional

To make a Cookie Christmas Tree you will need:
* 12 star-shaped fondant-covered cookies – 2 of each size XS, S, M, L, XL, XXL
* Approx 50g royal icing, in piping bag
* Assortment of sprinkles to decorate
* Plate/cake board on which to assemble the Cookie Christmas Tree

Massage the royal icing in the piping bag to ensure it is all an even consistency, before you snip the tip off the bag with scissors. To start, do not to cut too much off, or as you go to pipe, too much will come out at once. You can always go back and cut off a bit more if it is too small.

  1. Pipe a small mound of royal icing onto the plate where you want your Christmas tree to go (about the size of a 10c piece).
  2. Place on an XXL cookie onto the royal icing, centred, cookie side down, and press down firmly to secure (not too hard or the cookie could possibly break).
  3. Proceed to pipe another small amount of royal icing onto the centre of the star, and place the other XXL cookie on top, centred, but offset the star tips.
  1. In this fashion, continue to build up the tree, 2x XXL, 2x XL, 2x L, 2x M, 2x S and 1x XS. 1x XS star
  1. Decorate the single XS star that will go on top of the Christmas tree, using some royal icing for the glue and attaching your choice of sprinkles.
  1. Set the top star aside while you continue to decorate the remaining tree branches, using piped royal icing and sprinkles.
  1. Finish off the tree by generously piping royal icing onto the very top and placing the XS star standing up.
  1. Set aside for an hour or so, to allow the royal icing to dry (depending on climate and humidity).
